Rosemary Cacao Memory Mousse

Rosemary (Rosmarinus officinalis) known traditionally as “the herb of remembrance” is currently being studied for its ability to combat age-related cognitive impairment. Some Pharmaceuticals that are used to treat the symptoms of Alzheimer’s inhibit the enzyme acetylcholinesterase (AChE) which in turn inhibits the breakdown of the neurotransmitter acetylcholine (ACh). Rosemary contains aromatic compounds that are AChE antagonists. Preliminary research suggests some constituents in rosemary may also have a protective effect on dopaminergic neurons.
The combination of the cacao, coconut and rosemary is heavenly. I make a batch at the beginning of the week, place in half cup mason jars and I enjoy this dessert cold throughout the week.
