Kudzu root (Pueraria Montana) has been used traditionally for symptoms of alcohol abuse such as headache, dizziness, and vomiting. Kudzu has also been used for menopause, myalgia, gastritis, and diarrhea. Recent research suggests that it may be effective in aiding in the treatment of alcoholism, angina, coronary heart disease, heart failure, diabetes, and obesity.

Heart failure: Taking 400 mg/day of puerarin, an active constituent in kudzu may improve left ventricular ejection fraction compared to conventional treatment alone in patients with chronic heart failure.

Diabetes: Puerarin may also reduce blood sugar in patients with diabetes. Clinical research suggests that taking 750 mg/day of puerarin in addition to other diabetic medications for 12 weeks significantly reduces HbA1c in patients with type 2 diabetes.

Weight loss: Clinical research suggests that taking a kudzu extract 300 mg daily for 12 weeks significantly reduces visceral fat and BMI compared to placebo in obese patients.

This pudding is high in vitamin C due to the rose hips. The rose hips and raspberries provide a subtle tartness that combine well with the cacao and coconut cream. Kudzu, along with all its health benefits, also acts as a thicker, much like arrowroot powder; which gives the pudding a thick consistency. I heat the dried rose hips with the coconut cream for 10 minutes on low heat. I strain the coconut cream then combine all other ingredients. You can eat the pudding warm or you can also cool it for an hour and then enjoy!
