How to Dry your Fresh Herbs

1. Rinse and remove all dirt and yellow-spotted, dry, or moldy flowers/leaves
2. Bundle 6-8 stems tightly with a rubber band or ribbon
3. Hang upside down in an airy room to dry, after a couple of days the herbs will start to dry up, the rubber bands/ribbons may loosen, place the herbs in separate paper bags (upside down again) punch small holes, with a toothpick, throughout the bags (these bags will serve the purpose of catching the small leaves and flowers that dry up and fall off the stems over the next couple of weeks)
4. Give the herbs around 2-3 weeks to completely dry, most flowers and leaves will fall into the paper bag, store in glass jars, in a cool, dry place.
5. Your herbs are ready to use in recipes that call for dry herbs!
Tip: Every tablespoon of fresh herb is approximately one teaspoon of dry herb
